Basic tea brewing knowledge ( 1 ) Measuring the tea quantity

 
     
 

1.       Non-Fermented tea (light roasted tea): place in the tea container about 2/3% to 3/4% tea amount.

2.      Semi-fermented tea (medium roasted tea): place in tea container about 1/2% to 2/3% tea amount.

3.       Fully-fermented tea (dark roasted tea): place in tea container about 1/3% to 1/2% tea amount.

In the above description, the amount of tea used is the general standard, when tasting tea, according to personal habits the following principles can also be used as references:

1.       People who have the habit of drinking strong tea, the amount of tea can be increased, if opposite then the amount should be decreased.

2.       For high quality tea, the amount of tea should be decreased, if opposite then it should be increased.

3.       If the amount of tea used is a lot, then the infusion time should be decreased, to increase the number of times the tea can be infused.

1.       When using the cup lid is, 3 grams of tea can be used with 150 cc of water, an infusion time of 5 minutes is the standard. (the detailed brewing method please see below)

2.       When fermented tea is used with Yixing style teapots (Kungfu brewing method), generally the first infusion takes this amount of time:

Fully-fermented tea: 3 seconds to 1 minute.

Semi-fermented tea: 1 to 2 minutes.

Non-Fermented tea: 1 to 2 minutes.

When using high quality tea, the infusion time should be slightly shorter, especially for high quality fully-fermented tea, the first few infusions should be poured out after 3 to 5 seconds, if the time is delayed, it will affect the sweetness and aroma of the tea quality, and cause a slight bitterness, the water nature (number of times that it can be brewed) will also decrease. Besides that, the following three points should be given attention:

1.       No matter what type of tea, for the last few infusions, the infusion time should be increased, so that the tea nature has enough time to be released. Generally for each extra infusion, the time should be increased by 10 to 30 seconds.

2.       For teas that value aroma, the infusion time should be shorter; for teas with heavy flavors, the infusion time should be longer.

3.       For people who like strong tea, the infusion time can be increased; for people who like diluted teas, then the infusion time can be decreased.
